Slow Cooker Beef Stew

Beef Stew and I have had a love/hate relationship. I have never felt good about serving the over-salted, processed, canned stuff, the packet kits never taste just right, and my from-scratch attempts have been sketchy at best. Until now! I found this recipe online and tweaked it to make it my own. Yum. Slow cooker stew success!

1 pack (approx. 2lbs.) Cubed Beef for Slow Cooking
1/4 cup Flour
1/2 tsp Salt
1/4 tsp Ground Black Pepper
1 Clove Garlic Minced
1 Bay Leaf
1 tsp Paprika
2 tsp Worcestershire Sauce
1 Onion, Chopped
3 cups Beef Broth
3 Potatoes, Diced
4 Carrots, Sliced
1 Can Stewed Tomatoes
2 tbsp Sour Cream

Place meat in slow cooker. Combine flour, salt and pepper and pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and tomatoes.

Cover and cook on high for 4-6 hours or low for approx. 10 hours. During the last 10 minutes of cooking time, stir in sour cream.

Serve with some yummy rolls and enjoy!
