My FIL turned 60 this weekend. On Saturday, we all got together at a local Italian restaurant and celebrated. Grandchildren, cousins, aunts, uncles, brothers, mothers and dads. I love being with family.

After dinner we all went to our house for cake and ice cream. I put my ice cream maker to work earlier in the day and had 3 types of ice cream to offer. I use the Cuisinart with the freezable mixing bowls. All the recipes are really easy to make, reduced fat, and egg free for DS.

Vanilla Ice Cream
3 cups half and half
3/4 cup sugar
1 tsp. vanilla
Mix well, pour in ice cream maker and churn for 20-25 minutes.

Mint Chocolate Chip Ice Cream
3 cups half and half
3/4 cup sugar
1/2 tsp peppermint extract
1/2 cup mini chocolate chips
Mix half and half, sugar and extract well, pour in ice cream maker and churn for 20-25 minutes, adding chips during last 10 minutes churning time. If you would like, you can add a few drops of green food coloring before churning.

Coffee Ice Cream
3 cups half and half
3/4 cup sugar
4 tsp. instant decaf coffee
Mix well, pour in ice cream maker and churn for 25-30 minutes.

Today (Sunday) has consisted of nothing but hanging out. Relaxing, visiting with DH’s brother, SIL and their sweet baby before they left around lunch. A little football on TV and Mega Man on the GameCube. Besides the annoying tickle I’ve had in my throat all weekend, it’s been a great time!
